Maslow belongs to that category of places Paris took its time earning: a fully vegetarian restaurant, set right on the Seine, where nobody asks you to hold the ham or swap the fish for something else. The menu here was built that way from day one. We’ve been back several times now, and every visit has worked.
A terrace on the Seine, between Pont Neuf and the Conciergerie
On quai de la Mégisserie, in the 1st arrondissement, Maslow holds a position plenty of Paris restaurants would envy. The dining room looks straight out over the water, and in good weather the terrace stretches to nearly 80 covers facing Île de la Cité and the Conciergerie. Inside, the room seats up to 120, in a decor that mixes light wood with greenery, without ever tipping into the slightly austere organic-restaurant cliché.
The place opened in spring 2023, launched by restaurateurs Julian Chican Vernin and Marine Ricklin, alongside chef Mehdi Favri. Their bet: prove you can do without meat and fish without ever giving up the pleasure of the table.
A menu built for sharing, from Italy to Japan to Greece
At Maslow, you don’t order a dish just for yourself. The idea is to pick two or three plates per person and share everything in the middle of the table, tapas-style. The menu pulls influences from all over: gnocchi wrapped in a sheep’s tomme cream with zaatar, a portobello mushroom worked into a Japanese katsu style, feta paired with roasted figs. Some dishes, flagged directly on the menu, are even vegan. The ingredients, though, stay local, even when the inspiration travels.

What our daughter loved
She loves everything on Maslow’s menu, but especially anything with an Asian influence. That said, everything’s a banger, right through dessert. She eats as much as an adult when we’re at Maslow.

We love all of it, the dishes that rotate seasonally as much as the ones that have become fixtures on the menu. The shared-plates format, the mocktails, always well made. We also love the upbeat service and the fact that Maslow stays open right through the day. In short, we’re big fans, we come back whenever we can, and we can’t wait to check out the new Maslow Temple address.

Yes, and ideally several days ahead for evening service and for the terrace in good weather. The restaurant fills up fast, especially on weekends.
