A Venue That Truly Lives Up to Its Name

You have to dare to push open the gate of Passage Sarget to discover the soft lighting and elegantly set tables of Le Passage Secret. The name immediately makes sense. It feels like the kind of place you stumble upon by chance, or are privileged to be let in on. Most of all, there’s a strange sensation that the passage itself transforms once the surrounding shops close for the evening.

The restaurant is spread across two spaces: a discreet terrace on the ground floor, accessible directly from the covered arcade, and an upstairs dining room that combines elegance with a relaxed atmosphere. The number of tables is intentionally limited, creating an almost intimate connection between guests and the front-of-house team.

The Princess Loved

As someone who naturally enjoys spontaneous evenings out, especially at a Bordeaux restaurant that has caught the attention of the Michelin Guide, she was delighted. Her favourite dishes were the tempeh and the mushrooms.

She’s already looking forward to coming back in winter to dine inside one of the restaurant’s transparent bubbles.

Behind every plate served at Le Passage Secret lies an extraordinary culinary journey. Thomas Pasquereau, 42, trained at Sainte-Anne Hospitality School before working alongside Michelin-starred chefs and Meilleurs Ouvriers de France, including Richard Coutanceau. At just 23 years old, he became Executive Chef at the French Embassy in Cambodia before taking on the role of Sous-Chef at Club Shanghai. These international experiences have had a lasting influence on his vision of French cuisine, and likely on his approach to plant-based cooking as well.

You can feel this in every dish. Here, vegetables are the star of the show, not merely an accompaniment. Through his vegetarian menu, Thomas Pasquereau applies his expertise in sauces and cooking techniques, the very foundations of his cuisine, to elevate vegetables in a remarkable way.

We especially loved dining within the passage itself, with its slightly surreal atmosphere and the feeling of being in a place that comes alive and transforms after dark.
